When does the plan start?

Install it at home on wifi before you fly. The plan stays dormant until it first connects to a covered network after you land, so its validity only starts when you arrive.

Will my phone work with an eSIM?

If it is eSIM-capable and carrier-unlocked, yes. That covers iPhone XS or newer and most recent Pixel, Samsung and other Android flagships. You install it from a QR code and nothing is posted to you.
